Pomegranate Butternut Squash & Feta Cheese Spinach Salad


You guys, I’m not kidding when I say this is probably one of the best salads I’ve had like… EVER.  If you read last weeks post, then you know how in love I fell with butternut squash.  So, I decided to get a little funky and add it to my salad.  I mean it is just that delish, so why not?  The best part… it TOTALLY works!

Salads are one of my favorite dishes to make and devour.  You’ll never see me order one out at a restaurant, but at home… well, lets just say I’m all about that salad life.  They’re quick, easy and you can get super creative with them!  How do you get creative with a salad in fall you ask?  Well, add some sweet maple honey roasted butternut squash, tangy pomegranate arils, salty feta cheese and savory roasted pecans, topped off with a mouth watering apple cider vinaigrette dressing and (drum roll) amazing things just happen!  But don’t take my word for it.  Try it out for yourself!  This recipe is super easy, and will take you less than 10 minutes to make (not including the preparation and baking of the butternut squash, but you get where I’m going with this.)

- Pomegranate arils 
- Maple cinnamon honey butternut squash (RECIPE HERE)
- Crumbled feta cheese
- Fresh organic baby spinach
- Toasted (or fresh) pecans 
- Apple cider vinegar (dressing)
- Dijon mustard (dressing)
- Organic raw honey (dressing)
- Himalayan salt and pepper to taste (dressing)


1. Prepare and bake your butternut squash. Allow to cool before adding to salad.
   (I personally like mine cold, so I use leftover butternut squash.)
2. In a large bowl, mix together spinach, butternut squash, pomegranate arils, pecans, and 
   salad dressing. (recipe mentioned shortly)
3. Top off with crumbled feta cheese
4. EAT UP!

1. Whisk together 1/3 cup of apple cider vinegar, 1/3 cup of dijon mustard and 1/3 cup 
   of honey.
2. Add in salt and pepper to taste.
3. Drizzle over salad.
